Ingredients

Scale

Dry Ingredients:

  • 1 cup Albers Yellow Cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar (adjust for sweetness)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Wet Ingredients:

  • 1 cup buttermilk (or 1 cup milk + 1 tablespoon vinegar)
  • 1/3 cup melted butter or vegetable oil
  • 1 large egg

Optional Additions:

  • 1 tablespoon grits (for texture)
  • 1/2 cup sweet corn kernels
  • 1/4 cup shredded cheese

Instructions

  • Preheat the Oven: Preheat to 425°F (218°C). Place a cast iron skillet in the oven to heat.
  • Mix Dry Ingredients: In a bowl, combine cornmeal, flour, sugar, baking powder, and salt.
  • Prepare Wet Ingredients: In another bowl, whisk buttermilk, melted butter, and egg until smooth.
  • Combine: Gently fold wet ingredients into the dry ingredients. Avoid overmixing; lumps are fine.
  • Pour into Skillet: Grease the hot skillet, pour in the batter, and smooth the top.
  • Bake: Bake for 20–25 minutes until golden brown and a toothpick inserted into the center comes out clean.
  • Cool and Serve: Allow to cool for 5–10 minutes before slicing.

Notes

Add grits for extra texture or sweet corn for a burst of natural sweetness. Serve warm with butter or honey for the best flavor.
