Ingredients
Scale
- 1 lb ground beef (or ground turkey for a leaner option)
- 1 packet taco seasoning mix
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn kernels, drained
- 1 can (14.5 oz) diced tomatoes (with chilies, optional)
- 1 can (10 oz) diced green chilies
- 4 cups beef broth (or vegetable broth)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- Salt and pepper, to taste
- 1/2 cup heavy cream (optional for a creamier texture)
- Crushed tortilla chips or Frios (for topping)
- Shredded cheddar cheese (for topping)
- Sour cream (for topping)
- Fresh cilantro (for garnish)
Instructions
- Brown the Ground Beef:
In a large pot or Dutch oven, cook the ground beef over medium heat until browned, breaking it apart with a spoon. Drain any excess fat. - Sauté Onion and Garlic:
Add the diced onion to the pot and sauté for 3-4 minutes until softened. Add the minced garlic and cook for another 30 seconds until fragrant. - Add Spices and Taco Seasoning:
Stir in the taco seasoning mix, cumin, chili powder, smoked paprika, salt, and pepper. Mix well, letting the spices toast for about 1 minute. - Add Beans, Corn, and Tomatoes:
Pour in the black beans, kidney beans, corn, and diced tomatoes (with chilies if using). Stir everything together. - Simmer:
Add the beef broth and diced green chilies, then bring the mixture to a simmer. Let it cook for 15-20 minutes, allowing the flavors to meld together. Stir occasionally. - Finish the Soup:
For a creamier texture, stir in the heavy cream and let it simmer for an additional 5 minutes. - Serve:
Ladle the soup into bowls. Top with a handful of crushed tortilla chips or Frios, shredded cheddar cheese, sour cream, and fresh cilantro.
Notes
Notes:
- You can swap the ground beef for ground turkey or chicken for a leaner option.
- Feel free to adjust the level of spiciness by adding more or fewer chili peppers.
- For a vegetarian version, simply omit the meat and use vegetable broth instead of beef broth.
