  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • Salt and pepper, to taste
  • 1/2 cup heavy cream (optional for a creamier texture)
  • Crushed tortilla chips or Frios (for topping)
  • Shredded cheddar cheese (for topping)
  • Sour cream (for topping)
  • Fresh cilantro (for garnish)

Instructions

  1. Brown the Ground Beef:
    In a large pot or Dutch oven, cook the ground beef over medium heat until browned, breaking it apart with a spoon. Drain any excess fat.
  2. Sauté Onion and Garlic:
    Add the diced onion to the pot and sauté for 3-4 minutes until softened. Add the minced garlic and cook for another 30 seconds until fragrant.
  3. Add Spices and Taco Seasoning:
    Stir in the taco seasoning mix, cumin, chili powder, smoked paprika, salt, and pepper. Mix well, letting the spices toast for about 1 minute.
  4. Add Beans, Corn, and Tomatoes:
    Pour in the black beans, kidney beans, corn, and diced tomatoes (with chilies if using). Stir everything together.
  5. Simmer:
    Add the beef broth and diced green chilies, then bring the mixture to a simmer. Let it cook for 15-20 minutes, allowing the flavors to meld together. Stir occasionally.
